Specific "terroirs", grape varieties and growing methods
From the setting up of the AOC Crémant de Bourgogne in 1975, Gérard and Danielle decided to plant vineyards specific to Crémant, destined to produce grapes suitable for making the base wines for Crémant de Bourgogne. • Palette of terroirs- 1977 : Côte de Beaune and Hautes Côte de BeauneAbove the Côte de Beaune are spread the hills of the Hautes Côtes de Beaune, at 400 metres elevation and facing the rising sun.We manage 3 hectares of Chardonnay, 4 hectares of Pinot Noir and 2 hectares of Aligoté.The soil mix of clay, marl and limestone brings both minerality and finesse to the Chardonnay variety, elegance and fruit to Pinot Noir and all its freshness and lightness to Aligoté.- 1986 : Côte ChalonnaiseOn the Côte Chalonnaise, 20 kms south of Beaune in the prolongation of the Côte d'Or, our vines are situated between the villages of Rully and Mercurey.Our parcels are dedicated exclusively to Chardonnay on 4.5 hectares. The clay-limestone soil reveals the power and complexity of this noble Burgundian grape variety.- 2009 : increase of vineyardsTo maintain the richness and constant quality of our cuvées, we increased our vineyards while staying in the same geographical areas. Today they spread over 13 hectares.The blending of base wines is a stage that conditions the quality of an effervescent wine; the diversity of choice offered by our vineyards and that of our historical vine-growing suppliers of grapes, in terms of grape varieties and terroirs, allows us to create blends that give the finesse and personality to our Crémants. • Growing methodsWe have made the choice of managing our vineyards in lutte raisonnée balanced approach viticulture. Treatments are carried out as a function of the needs of the vines and not in systematic fashion, so as to control the quantities of additives (in particular chemical substances such as fertilizers or other phyto-sanitary products) and to limit as much as possible their negative impact on the environment. Soil analyses are carried out regularly so as to control soil balance and adapt additions of fertilizing products. Predictive models also allow us to rationalize and limit pesticide usage.All of our parcels are in vignes hautes high-trellised vines, pruning is classically in Guyot style and we encourage grassing-over between vine rows.In this way, while respecting the environment, we obtain healthy and balanced raw materials that allow us to create high quality Crémants.
